Tasting Notes
Elderflower, meadowsweet, blossom, plenty of aromatics and texture but also mineral and dry. Bacchus and Ortega grapes made in col fondo style - so a 2nd fermentation takes place in the bottle but no dosage added or disgorgement. The first fermentation was with wild yeast in concrete eggs. 1/3 of the bacchus received 14 days of skin maceration to increase complexity, aroma, and texture. It was bottled with less pressure than a champagne, 3 bar, and has so far spent 10 months on lees. It was a really satisfying wine to produce. A beautiful and powerful sparkling wine that is best paired with food, it can match strong dishes and always good with tapas and fish. Crown cap

About the producer
Phil Harris bought his farm in Hastings in 2017, and planted vines in 2019. He previously worked for Davenport Vineyards between 2007-21, studied at Plumpton and - before joining the world of wine - was an archaeologist. Before meeting Will Davenport, Phil enjoyed an influential spell working for Domaine Zind Humbrecht, Lukas Rudolfsky in Czechia, and time in Galicia. He is a three-time UK pruning champion.
