Jacques made the wine at the family estate, Domaine Louis Carillon et Fils, for twenty years before setting up on his own.   All the wines are barrel-fermented in 20-35% new oak and aged for twelve months in cask followed by six months in stainless steel vats.  The style remains that of classic white Burgundy, built to age, with a winning combination of ripe fruit and thrilling acidity.

"Carillon's 2017 Puligny-Montrachet is showing well from bottle, wafting from the glass with a lovely bouquet of fresh pear, peach, white flowers and wheat toast. On the palate, it's medium to full-bodied, supple and racy, with a charming and expressive core of fruit, fine tension and a mineral finish."
