Bacchus and Ortega grapes made in col fondo style - so a 2nd fermentation takes place in the bottle but no dosage added or disgorgement. The first fermentation was with wild yeast in concrete eggs. 1\/3 of the bacchus received 14 days of skin maceration to increase complexity, aroma, and texture. It was bottled with less pressure than a champagne, 3 bar, and has so far spent 10 months on lees. It was a really satisfying wine to produce. A beautiful and powerful sparkling wine that is best paired with food, it can match strong dishes and always good with tapas and fish.
